Kefir smoothie
THIS SMOOTHIE IS DELICIOUS, REFRESHING AND HEALTHY. IT'S VERY QUICK AND EASY TO MAKE, SO IT'S THE PERFECT ON THE GO SMOOTHIE.
Ingredients:
1 cup of Good Moood Farm kefir
1/2 cup of frozen fruit or berries of your choice. Fresh fruit is a great choice as well!
Instructions:
Combine all ingredients together and blend. Play around with ingredient combinations to get the flavor and texture to your liking.
Kefir pancakes
Ingredients:
2 cups all-purpose flour
Instructions:

1 1/2 teaspoons baking soda
1/2 teaspoon salt
2 cups of Good Moood Farm kefir
1/2 cup milk or buttermilk
1 teaspoon vanilla extract
2 eggs, lightly beaten
Fresh fruit, butter, sour cream or syrup, for serving
In a large bowl, whisk together the flour, baking soda, and salt.
In a separate bowl, combine kefir, milk, vanilla extract, and eggs. Add to dry mixture and mix just until moistened. Batter will be lumpy!
Pre-heat griddle or skillet over medium heat (or just below). Lightly grease griddle or skillet, and spoon batter on.
When many bubbles have risen to the top of the pancake (about 3-4 minutes), flip over and continue cooking until done (about 1-2 minutes).

Serve immediately, or keep pancakes warm on a plate in the oven until all have been cooked. Serve with butter, fresh fruit, sour cream or syrup. Enjoy!
Mushrooms omelette with Kefir
THIS PARTICULAR RECIPE IS SPECIAL BECAUSE KEFIR TRULY MAKES A GREAT OMELETTE. BY USING KEFIR, YOU ARE CREATING A FULLER, FLUFFIER OMELETTE WHICH IS QUITE DIFFERENT FROM THE ORIGINAL, BUT ONE WHICH YOU MAY PREFER.
Ingredients:
3 eggs
Instructions:
2-3 mushrooms of your choice
2 table spoons of Good Moood Farm kefir
2 table spoons olive oil or butter
Cheddar Cheese (to taste)
Pinch of salt and pepper

Mix the eggs and kefir in a separate mixing bowl and add the salt and pepper. Thinly slice the mushrooms and cook them on high in the butter or olive oil until golden. Turn the stove down to medium before adding the egg and kefir mix by spreading it evenly on the pan.
When the omelette starts to set, but there is still some raw egg sitting on top, add the cheddar. Remove the omelette from heat and use the handle to shake the omelette loose from the pan. Using your fork or spatula, fold it on top of itself. Serve immediately.

Kefir Avocado Dressing
THIS WILL MAKE A SALAD TASTE MORE DELICIOUS WHILE STILL BEING HEALTHY. IT'S ALSO DELICIOUS AS A DIP FOR VEGETABLES. MOT ONLY THAT, IT LOOKS REALLY AWESOME.
Ingredients:
1.5 cups of Good Moood Farm kefir
Instructions:
Combine ingredients in a blender and blend until smooth.
1 avocado (1.5 for a thicker dressing)
chopped basil and cilantro (to taste)
3 tablespoons olive oil
1 teaspoon salt
Vegetable Kefir Quesadilla
THIS RECIPE PUTS A NEW SPIN ON THE ALREADY AMERICANIZED MEXICAN FOOD. THIS HEALTHY AND YUMMY MEXICAN INSPIRED TREAT IS DEFINITELY WORTH THE EFFORT.
Ingredients:
3 medium sized potatoes
Instructions:

Boil the potatoes until they are tender, and then put them aside. Heat up the olive oil in a frying pan, and add the onions (finely chopped), green onions (finely chopped), green chilli and the crushed garlic cloves. Cook for about 5 minutes. During this time you can quickly cook the mushrooms and zucchini in the microwave for 4 minutes with just a bit of water.

2 garlic coves
5-7 button mushrooms (chopped)
1 zucchini
1 green chilli (remove the seeds and finely chop)
1 lime
3 tablespoons of olive oil
1 cup of peas
Handful of mint leaves (finely shredded)
Half of 1 large onion (finely chopped)
2 green onions (finely chopped)
2 cups of graded cheddar cheese
Flour tortillas
Your favorite salsa
Once the onions are soft, add the potatoes and mash into the mixture. With the potatoes good and mashed, add the lime juice and mint. Now to keep the quesadilla filling from going dry, add two table spoons of kefir. This makes the potatoes real creamy. Toss in the cooked mushrooms and zucchini as well as the peas.
Take out another frying pan and brush it with just a bit of olive oil to brown the tortilla a bit. Now set a tortilla on the pan and add some of your filling to one side of the tortilla. Add a healthy portion of cheese (remember, it is a quesadilla that we are making here) and fold it up. Flip the it once the cheese starts to melt and get the other side of the quesadilla cooked a bit.
Right before eating, open the quesadilla up and top it off with some salsa and kefir as you would apply sour cream. Enjoy!

Quorn and Kefir Bolognese Sauce
THIS IS A HEALTHY BOLOGNESE RECIPE THAT SIMPLY TASTES REALLY GOOD. qUORN WORKS SURPRISINGLY WELL AND THE KEFIR ADDS A WONDERFUL CREAMY TEXTURE.
Ingredients:
2 table spoons olive oil
Instructions:
Finely chop the onions and smash the garlic before cooking the results in the olive oil. Once the onions go soft, add the Quorn. Add spices, and then toss in the can of diced tomatoes. Add the kefir and let it mix in with the tomatoes and Quorn until it gets a nice creamy consistency.
Serves 4 people (with pasta of course).
Cook the veggies in the microwave for 4 minutes with a tad bit of water. You can obviously steam them, or whatever you like, but the microwave cuts the time down. Add the can of sliced tomatoes as well as the rest of the veggies you just cooked. Add some salt and pepper to taste and there you go. Put that sucker on your favorite pasta and you are all set for a super healthy and tasty meal.

ENJOY EATING MEDJOOL DATES, WHICH ARE A VERY SWEET FRUIT, BUT THEY'RE MAYBE A LITTLE TOO SWEET. IT TURNS OUT THAT THEY TASTE VERY DELICIOUS WHEN FILLED WITH THE COOLNESS AND TANGINESS OF CREAM CHEESE AND KEFIR. THEY ARE NICE TO SNACK ON, AND WORK GREAT AS FINGER FOOD AT A WINE AND CHEESE PARTY.

8-10 Medjool dates
Instructions:
Slice the dates in half and take out the pit. Combine the cream cheese and kefir in a bowl and beat with a fork. Fill each half date with the cream cheese kefir mixture, and top with chopped almonds.

Kefir Yeast Bread
KEFIR YEAST BREAD IS A GOOD ALTERNATIVE TO BUTTERMILK YEAST BREAD.
Ingredients:
4 cups unbleached all-purpose flour
Instructions:
Mix in large glass or porcelain bowl with wooden spoon. Cover top of bowl with cling wrap or a clean dish towel. Set in your oven and turn on the light. Leave until it bubbles, about 1-3 hours and the yeast and Kefir has a chance to activate.

Melt 1 stick of butter in small saucepan, cool. Remove bowl from oven, and add 1 Tbs sea salt. Stir with wood spoon. Pour almost all the butter into the dough (pour in a corner, so if the butter is too hot, it won't kill the yeasts, except maybe in the small corner). Stir slowly and gradually then quicker until all is incorporated, the butter.
Start adding, one cup at a time, more unbleached all-purpose flour. At 4 cups, it's thick enough to handle. Sprinkle about 1-2 cups more onto a clean counter top, and scrape dough onto top of this 'bench flour'. Gently fold and turn the dough, until the counter top flour coats it. Gently knead this dough to absorb most of the flour, until it's just manageable and not too sticky. Shape into a ball, and let it rest while cleaning up, 5-10 minutes.
Cut dough in to 4 portions. Lightly oil and sprinkle corn meal on two baking sheets. Shape each portion into a 'log' and place 2 logs side by side on each sheet, with some space in between. Cover them with a clean dish cloth and set in the oven again for about 30-40 minutes. Remove them from oven and preheat to 400 deg F. Brush the remainder of the butter gently over the tops of the loaves. Fit both sheets into my oven, by placing one low, and the other shelf upper mid way. Rotate them at the half way baking point, and brush more butter if there is any left. Bake for ~28 minutes (adjust for your oven and altitude.)

If you cover the fresh baked loaves with a soft, clean cloth once baked, the crust is softer and more like store bought (good for kids). Use a serrated knife for slicing.

Kefir Parfait
GREAT FOR DINNER PARTY, IMPRESS YOUR GUESTS WITH A PROBIOTIC SWEET TREAT.
Ingredients:

Instructions:
Recommend using a sweet granola here so that when combined with the honey, the slightly sour flavour of the kefir will be hidden. This is a dessert remember, we want it to be sweet.
Start by putting down a kefir base, say of 3 or 4 spoonfuls. Add a couple drops of honey to the kefir and cover that up with a layer of granola. Now add a mix of our diced fruit. Repeat this process until the cup is filled up.
